The Honor of Work

Mexican_Fruit_Pickers_(7618119180).jpgWhen I work in my yard I go all in. I usually end up with dirt smeared on my face and caked under my fingernails. Sweat runs downs my neck and my hair sticks up in all directions. There is nothing pretty about me in those times. The work is hard and often leaves my muscles aching and my back shouting at me in pain. The truth is that I overlook all of those things because I love being a weekend gardner so much. I can feel bursts of serotonin taking me to a happy place in my brain. Still, I think of my grandparents who themselves worked on farms day after back breaking day. I imagine how difficult it must have been for them to rise early and routinely toil in the sun. For me the labor is a hobby, one that I have the power to ignore anytime that I tire of the effort. For them it was the means of earning money to pay for a place to live and food on the table.

My grandparents’ descendants have done well. We generally have professional occupations that allow us to work in air conditioned buildings and bring home salaries good enough to pay others to do most of the back breaking work that we require if we so wish. We purchase our fruits and vegetables from Sprouts and have enough income for luxuries that they never even dreamed of owning. I feel their spirits when I am on my hands and knees caring for my plants while the sun beats down on my head. I frequently stop to savor a cold drink when I grow weary. I survey land that is my own, not the property of someone else. I remember and appreciate all of the things that they did so that one day all of us who came from their blood, sweat and tears would have a far better existence than they had.

I see beauty in the tomatoes, oranges and other produce that lines the bins at HEB. I don’t take such delights for granted because I understand the drudgery that people endured to bring those items to the markets where I shop. There were individuals who picked the fruits and vegetables hour after hour, day after day as long as the sun was shining. They were paid little and only received monetary rewards for full bushel baskets and bins. Their work was routine and tough on both body and soul. They are the nameless men and women whose plight has almost always been ignored throughout history. At one time they may have been slaves or indentured servants. In other eras they were the poor like my grandparents. Today they are mostly immigrants who toil from farm to farm, season to season in search of jobs that few of us would want.

I once traveled to a small town school to work with teachers who were struggling with the Hispanic children in their classrooms. They complained that the sons and daughters of migrant workers were skewing the test scores used to appraise their effectiveness as educators. They referred to the parents “the tree cutters” and insisted that these uneducated people didn’t care enough about their kids to realize the importance of schooling. It didn’t seem to occur to the baffled teachers that the mothers and fathers who worked so hard were in fact incredibly dedicated to their children, so much so that they were willing to do even the dirtiest of jobs. I was saddened by the ignorance of people who should have known better than to treat a significant portion of their student body as stereotypes. Even after my partner and I had shown them how to reach their charges they appeared to be as adamant as ever that the children of these hard working people were an inconvenience that would have preferred to simply wish away.

Most of us who live in the United States of America enjoy a level of plenty that might have made our ancestors feel wealthy. We are provided educational opportunities that were not afforded them. It was not uncommon in my grandparents’ day for youngsters to rarely attend school after the third or fourth grade. Sadly in many parts of the world even today people struggle to meet their most basic needs and even to feel safe. They are chronically hungry and suffer from health problems that are rarely addressed. We on the other hand are a nation that has mostly forgotten what it is like to live the way so many of our grandparents and great grandparents actually did. The conditions under which they labored are now mostly deemed illegal. 

I watched a group of students perform in the one act play, Gut Girls, not long ago. It addressed the working poor at the beginning of the twentieth century. It featured young women who worked in meat packing plants where the conditions were deplorable. I found myself imagining my grandfather who did a similar job for all of his working days. His legs became riddled with varicose veins and more often than not he was in pain but he never missed a single day of work. He boasted to his children that he had managed to feed them all the way through the Great Depression and keep a roof over their heads when others became homeless. He was proud to have regular work no matter how difficult it may have been and his children do not recall a single time when he complained. He endured his aches stoically.

There is great honor in hard work. We should celebrate anyone who is willing to devote time and effort to making an honest living. The person who collects our garbage is important just as the clerk behind the counter of a fast food restaurant is. The janitor is as indispensable as the manager, maybe even more so. We need our engineers and our electricians, our professors and our plumbers. The yard man who sculpts my lawn each weekend is always reliable and willing to do whatever is needed to make my home a lovely place to be. I truly don’t know what I would do without him. 

After a day of manicuring my plants, my hands are shouting at me with the sting of cuts and scrapes and bruises. They remind me to be thankful for what I have. They tell me to appreciate all good people everywhere. They urge me to be more generous and kind. But for the grace of God I might just as well have been born in another place or time that would have demanded more of me than I have ever had to expend.

Magical

downloadI’ve been retired from a four decades career in education for almost six years and I still can’t seem to avoid following the academic calendar. Perhaps it’s because a school bus stops in front of my home each morning to pick up the neighborhood children and I am daily reminded that the process of educating our youth has endures with or without me. Maybe it’s because I still tutor students twice a week at two different schools and in the evenings. I suspect that it’s mostly because I followed the August to June routine for so long that it has become embedded in the heart and soul of who I am. So it is that I continue to immerse myself in spring break rituals each year even though that special week for students and teachers shouldn’t make much difference to me now that I am free to do whatever I wish whenever I wish.

I made no plans for the annual March respite this year and yet the serendipity of my activities made it one of the most memorable and relaxing weeks that I have experienced in all of my years of partaking of the annual spring fling. It began with an evening track meet in which grandson Eli broke the district record for the 1600 meter run. Watching him plying his craft is akin to viewing a gazelle. His form is a breathtaking sight of beauty. Even better is his determination to continually compete with himself to be his personal best. I am in awe of him and watching him on that night was magical just as the rest of my spring break adventure would prove to be.

Husband Mike and I traveled to bluebonnet country the following day, enjoying the lovely blue carpets of the state flower that are so glorious each spring. We had bonafide Texas barbecue and sampled fruit kolaches that warmed the Slovakian half of my heart. We walked among the rows and rows of flowers at the Rose Emporium and brought home two more gorgeous bushes to join the collection that we already have. It was one of those absolutely perfect days that reminded me just how much I truly love the people and the sights of the place I call home.

The weather took one of those unexpected dips in temperature a day or so later just as it always seems to do this time of year. It was a perfect moment for making paprika stew for my grandson Andrew who had arrived for a sojourn from his studies at Purdue University. We had one of those old fashioned Sunday night dinners with him and his family. We caught up on all of his news and lingered at the dining table with stories and lots of laughs, ending our meal with pies that we had purchased at a bakery in a small town known for its sausages, baked goods and ice cream. It felt good to fill the house with our children and grandchildren. It had been quite some time since they had been able to steal a few hours from their busy school time schedules. Not wanting to end the joyful feeling of the evening we all agreed meet up again the following day for a musical light show at the Burke Baker Planetarium followed by dinner in Rice Village.

Just when it appeared that I would return to a somewhat uneventful week my granddaughter Abby who lives in San Antonio called me to request my presence at her home for the next few days. Mike had things to do, like taxes (ugh), so I hit the open road on my own. The drive has become second nature to me since my daughter moved there a little over ten years ago. I break down the distance into discrete parts that tell me that I am moving ever closer to the other half of my ever growing family. The weather was spectacular much as it generally is in March. The bluebonnets were even more profuse than they had been only days before and now they had been joined by the red Indian paintbrushes that shouted out, “This is Texas at its very best!”

My daughter is about to move to a new home so she was busy sorting and packing belongings while I was there. She reluctantly took a small slice of time to join us for gourmet burgers and milkshakes at Hopdoddy as well as a round of bowling at a rather unique emporium. Afterward we played board games and watched old Star Wars movies until late into the night. It felt so much like the kind of activities that we used to enjoy back when we my daughters were just girls and we spent our spring break time chilling out and enjoying life in slow motion.

While my daughter returned to her duties the children and I continued our adventures with a visit to a small hill country town called Boerne where we found treasures in the many different antique shops, including a slightly damaged kachina doll that grandson William named Footless Fred. We laughed with delight as we scored a tiny house fit for the gnome garden that the kids are designing, an old Stars Wars book, a poncho, and a set of quilted placemats. We ended our day with a side trip to Guadelupe River State Park where we skipped rocks and told one silly joke after another.

It was with a certain level of reluctance that I headed back home toward the end of the week, but the kids had things to do that they had been putting off while I was in there. I too needed to get back to reality, but not until I enjoyed what may well have been the most magical day of my spring break.

Mike and I began the final Saturday of my mini vacation by meeting Andrew once again for a farewell lunch. He looked so happy, rested and ready to tackle the next six weeks at Purdue. Like me had had been energized by the people and places that he most loves. He had an optimistic and determined twinkle in his eyes and I felt quite comfortable sending him off to joust with his challenging  engineering and mathematics classes. He will be halfway through his collegiate journey by May. He sees the light at the end of the tunnel and it is a beautiful experience to listen to him voice very adult and wise pronouncements about the future and life in general.

From our sojourn with Andrew we traveled to the home of one of my former students, a young man named Bieu. We have known each other for well over twenty years now and he faithfully maintains a constant connection with me just as he promised he would when he was just a boy in my math class. On this day he was hosting a crawfish boil, another March tradition in the Houston area. He had great pots of the lobster like creatures turning a bright delicious red as the water bubbled around them. He cooked potatoes and corn as friends and family enjoyed the cool afternoon in his backyard.

I continue to marvel at what a fine person Bieu has become. I am as proud of him as if he had been my own son. I laugh that he was the one who most closely followed in my father’s footsteps by earning a degree in mechanical engineering from Texas A&M University. I feel quite certain that my dad would have loved Bieu and his family as much as I do had he been around to meet them.

I ended my glorious week that evening at the seventieth birthday party of Josefina Carrillo. She once worked for Mike at a bank in southeast Houston and he insists that she was his best employee ever. I also had the privilege of teaching her daughter Josie at South Houston Intermediate. Because southeast Houston has always been a small and very friendly kind of world the connections to Josefina go even deeper. Her son married the sister of one of my daughter’s best friends from our old neighborhood, so it was like old home week at the gala.

We feasted on fajitas and sipped on margaritas while a mariachi band played “otra mas” tune after another. There was dancing and enough smiles to light up a city. We learned that many of the people who had come to honor Josefina had lived in our old neighborhood and been involved in the same circles that had defined our lives for years. The kinship centered on the birthday girl bonded us all together and we had an incredibly lovely time remembering how many joys and blessings we had all experienced.

As I think back on my week of simple pleasures I realize how lucky I have always been. I not only have happy, healthy children and grandchildren but a host of friends who have brought sunshine into my life over and over again. I thought of how so much of my good fortune came to be because of the time that I have spent in what must surely be the most inviting city anywhere, Houston and its surrounding areas. Where else would I eat New York style pizza, crawfish and Tex Mex all in one day? Where else would I be so welcomed by Vietnamese and Hispanic families within the space of only a few hours. Where else would the people be so hospitable? Where else would I have enjoyed such a magical spring break? Where else would I rather be?

Finding Beauty in Humble Places

How does one define beauty? Is it the latest super model on the cover of a magazine? Is it a sleek new car? Perhaps it is a stunning symphony or sunset over the Grand Canyon. For some it might be the laughter of a toddler or the words of a Shakespearean sonnet. For others it is a bouquet of roses or a rare jewel. While these are all stunning examples of loveliness, sometimes it is in the most unlikely corners of the world that we find the most elegant.

I loved my grandmother Minnie’s hands. They were wrinkled, swollen and misshapen. They had tilled soil, picked crops, milked cows, fed chickens and carried heavy loads. They had also held babies, rolled out dough for biscuits, and assembled guilts. They caught Grandma’s tears when her son died and fluttered to her cheeks when something made her laugh. They held a gun to shoot a squirrel for dinner and hauled in many a fish as well. They chopped off the head of a snake with a hoe and mended clothes to be used for another season. They were hard working and loving hands that showed their age without apology. They were indescribably beautiful.

I often find myself gazing at the simple loveliness of a glass of milk. I delight in its creamy color and velvety texture. I enjoy watching the bubbles that sometimes form at its edges when it has been newly poured. I see my good fortune in that liquid that builds bones and provides energy. I wonder how I have always been lucky enough to have as much of it as I have needed while others in the world are denied its hunger chasing powers.

When I attempt to unveil the mysteries of mathematics to my students there is nothing more glorious than the kind of smile that lights up a face at the moment of understanding. It is a marvelous sight indeed. The eyes glow and I can almost see right into the souls of my newfound geniuses. Their mouths curve in an upward smile showing a confidence that wasn’t there only moments before. We share a silent bond of accomplishment. Theirs is the joy of learning and mine is the satisfaction of providing possibilities.

The sound of the school bus stopping on the corner of my street each morning and afternoon tells me that I will soon hear the delightful voices of the youngsters who live in my neighborhood as they laugh and chatter with one another. I exalt in their playfulness and innocence. They remind me of how fantastic the future will most certainly be. The melody of their voices is an alluring concerto.

The first buds of spring, the cooing doves, the tree branches stretching heavenward and the deep blue sky on cool clear days are all gifts from nature, unique works of art. I take great joy in observing the bounty that is there for me to observe on my walks. I see turtles sunning themselves along the banks of the drainage ditch like armed sentinels. I laugh at the cats that skitter across my path taunting me with their agility and energy as I lope along.

A bird’s feather, a heart shaped rock, a golden leaf, a wildflower are all treasures that delight me. A baby’s foot keeping time to music or the friendly smile of a stranger bring glee instantly to my heart. The earnest drawing and sentiments of a young child are worthy of placement in the gallery of my soul. The warmth of a quilt on a cold night or an icy glass of tea on a summer’s day satisfy my wants and needs in ways that great wealth might never bring. A hug from someone that I love is the simplest but most incredible of pleasures.

It takes so very little for the ordinary to become extraordinarily beautiful. All we need do is pause from the hurry and scurry just long enough the hear the breaths that we take and the beats of our hearts. Savoring the quiet and using our senses to be totally in the moment reveals how much exquisiteness is all around us. Beauty is available for our enjoyment whenever we wish. When we take the time to notice we suddenly realize the glory of our universe with its patterns and colors and magnificence. We revel in our own humanity and realize that every shadow and crevice and nuance of our individuality is pleasing. We become one with the world and its people once we are able to still the negative voices in our heads.

It is not that difficult to meditate and reflect in such a way that we feel peace and are able to see the splendor in all things. It only takes a bit of practice and once we learn the tricks it brings us infinite contentment and optimism. It requires watching and listening and accepting, not talking, worrying, arguing or over thinking. It brings heavenly contentment to our bodies and our minds and we begin to see that there truly is beauty everywhere.

Lemonade

lemonade-012.jpgWe humans love a good party and manage to find excuses for having one on a regular basis. We celebrate birthdays, anniversaries, graduations, new jobs, weddings, retirements. Our yearly calendar includes festivities for the New Year, Valentine’s Day, Mardi Gras, St. Patrick’s Day, Easter, Mother’s Day, Memorial Day, Father’s Day, Independence Day, Labor Day, Halloween, Thanksgiving and of course the Big Daddy of them all, Christmas. We call friends together to view special events like the Academy Awards or the Grammys and we have elevated the watching of major sporting events to a form of high art in our quest for the perfect gathering.

In our efforts to find distractions from the routine of our daily lives we go to great lengths to make our occasions special. We decorate our homes and prepare special recipes. We don appropriate clothing and take photographs so that we might record our joy for all time. It’s all quite fun and plays to our natures as social beings. Mostly such times make us quite happy, but because we are each highly complex individuals such well intentioned galas sometimes also have the power of creating problems for us.

Our lives are never simply smooth transitions from one era to another. None of us are immune to the slings and arrows of misfortune. We all experience illnesses, loss, heartbreak, loneliness, fear. It is part of our destiny to be up one day and down on another. Challenges pop into our lives without warning. That special person to whom we have given our love proves to be disloyal and hurtful. The phone rings and we hear unbearably bad news. A routine visit to a doctor reveals an unexpected and frightening diagnosis. Our personal world is turned upside down from time to time as inevitably as the rest of humankind celebrates. Suddenly we view all of those lighthearted images on Facebook from a different perspective. We wonder how it is even possible for so many to be so happy when we are so down. Our pain can be quite real and disabling.

There are angels among us who notice such things. Even in the midst of their own revelry they think of people who are less fortunate. While they are buying the hot wings and beer for the Super Bowl party they also take time to contribute time and donations to the Super Bowl of Caring. These are very good people like the little Cub Scout that I know who spent his entire Saturday gathering food for the hungry in the city that hosted this year’s football extravaganza. Perhaps he has learned his generosity from his grandmother who quietly visited her elderly mother in a nursing home on Sunday night while the rest of us were cheering at parties and sports bars. Such gentle and unselfish individuals remind us to be aware of the suffering even as we have a good time.

I think of life as a joyful experience and I believe that it is good for us to find ways to celebrate. I went to two wonderful parties yesterday. The first was for a little boy who turned one. He is both a blessing and a miracle. Before he was even born doctors worried that he might have major heath problems. His parents were counseled to be ready for some rather frightening possibilities. They are faith-filled and were determined to trust in the will of God. They believed with all of their hearts that they would be able to handle whatever challenges lay ahead. Gloriously the baby boy has flourished and enjoyed good health but in an ironic twist his mother has spent much of his first year of life being treated for cancer. She and her family have approached her ordeal with the same level of hope and faith that they exhibited during her pregnancy. At this moment it appears that her treatments are doing exactly what they should and that she will one day be restored to good health again. Yesterday’s party was more than just a milestone for the little boy. It was a celebration of life and hope and never ending love evidenced by the smiling faces of adults and children pausing just long enough from their own trials and tribulations to show their gratitude for the wonders that they have witnessed in this remarkable family.

The second party was centered on a birthday for my sister-in-law Allison. Each year she invites family and friends to enjoy her special day while viewing the Super Bowl which invariably takes place right around the day of her birth. I have always suspected that Allison was born with a big smile on her face and that she filled her family’s home with laughter from the very beginning. She is one of those truly optimistic souls who bring joy and sunshine into every room that she enters. It would be easy to believe that she has somehow been immune to the sorrows and tragedies that stalk the rest of us but that would be false indeed. She has had many crosses to bear, maybe even more than most, but she manages to do so with a determination to continue her journey without becoming overwhelmed. She does whatever she has to do to stay upright and rarely allows her optimism to fade. I suspect that her secret is that she almost never focuses on herself even at her own birthday party. She is always thinking of everyone else and it is in her generous spirit that her true essence resides. It is the stalwart that keeps her from crashing into a state of despondency when her world goes awry. The people at her party all love her because she is a giver who makes each person that she encounters feel special.

It is good and right that we find reasons to celebrate. God knows that we are surrounded by much sadness and want. We don’t have to feel guilty for being happy and nourishing our souls. We need not don hair shirts and beat ourselves for being fortunate. There is a special beauty in a gathering of souls connected by a bond of friendship and love. It is from these small communities of caring that the power of all that is right and just eventually grows. The goodness that we all want for the world begins in living rooms with people smiling and cheering and sharing common bonds. If it takes a ballgame to create such moments, so be it.

For a few hours yesterday many of us forgot about our problems and our differences. We enjoyed the amazing talent of individuals who are among the best at what they do. We tapped our feet as Lady Gaga showed us how to come together by remembering who we are and what we have in common. We sat with people that we love and sent posts to friends who were with us even as they were far away. It wasn’t just about the food or the decorations or the game itself. Somehow we all knew that it was mostly about our humanity and our hopes and our dreams. Sometimes it is a truly good thing to stop in our tracks and allow ourselves to just enjoy the moment. It’s how we renew our energies and mend our divisions. Perhaps the best advice that any of us might follow is to seize the day. There is something quite lovely about making life a party in which we honor the best of ourselves and the people around us. Finding reasons for happiness is not an ignoring of reality. It is a celebration of it. So when you find yourself losing hope gather all of your lemons, make some lemonade and have a party.

A Frugal Aroma

gumbo-bowl-with-rice-and-green-onionsWhen my chicken andouille gumbo was simmering on the stove a couple of days ago I had one of those deja vu moments that sometimes waft over me unexpectedly. It felt as though I was back in my mother’s house and she was creating a kind of stew from the vegetables and leftovers that she had on hand. The aroma of chicken, onions, green pepper, and tomatoes brought back unmistaken memories of the mash up hash that Mama regularly created in her effort to use every single scrap of food stuff that we had. Her budget was always tight and we were always hungry like most kids. She became masterful at blending all sorts of things into delightful soups that filled our bellies and kept odds and ends from prior meals from going to waste. She had a natural talent for knowing how to create taste tempting flavors and never used a cookbook to make her delightful dishes. She simply had a sixth sense about cooking and rarely made anything that we disliked while rarely threw anything in the trash.

Mama never made gumbo but she used many of the same ingredients that are found in the many varieties of the Cajun recipes that originated for the same reasons that her cooking did, to use what was on hand to create culinary delights. Gumbo, stew, soup, hash are all the poor man’s answer to hunger. As a little old man once told me when I was about to toss a tiny crab back into the ocean, “Everyting makes da gumbo. Don’t trow dat away.” 

I suppose that my childhood eating experiences made me a prime candidate for enjoying the delightful mashup of flavors in gumbo but I needed a few lessons before I had mastered the techniques for consistently making a yummy fusion of flavors. I quickly learned that the secret of cooking well lies as much in the prep time as it does in the actual process that occurs on the stove. I have become almost fanatical in my insistence on doing things in a particular way to control the consistency of my final product. So here is my drill for making Chicken Andouille Gumbo with a tip of the hat to The Gumbo Shop in New Orleans for providing me with the basis of the recipe that I have tweaked a bit here and there.

You will need:

1 whole uncooked chicken (Don’t attempt to cut corners by purchasing a baked chicken and using canned chicken stock. I did that once and while the gumbo was edible it did not have the same burst of flavor that comes from cooking a whole chicken from scratch and creating a broth from that process.)

3 quarts of water (or enough to cover the chicken)

1 lb. of okra (frozen and already cut works best and is easier to find)

2 tbls. of oil for cooking the okra

1/2 cup of oil for making the roux

1/2 cup of flour

1 medium onion

1 green bell pepper

1 stalk of celery

16 oz. of diced canned tomatoes (You will not find a 16 oz. can so you will need to save any leftover tomatoes for another day.)

1 package of Andouille sausage

1 bay leaf

1 tsp. of thyme

1 tsp. of basil

1/2 tsp. of sage

1/2 tsp. black pepper

1/2 tsp. white pepper

1/4 tsp. cayenne pepper

2 tsp. salt

Take the gizzards and liver from inside the chicken carcass then cook the chicken in three quarts of water. I usually do this the day before I plan to make the gumbo so that I will be able to clean the chicken from the bones when it is no longer hot. Save the broth and cut the chicken meat into small pieces. Store both in the refrigerator. Discard the bones and the skin.

The following day measure all of the ingredients and have them at the ready in bowls. Chop the onions, green bell pepper, celery and Andouille sausage (make 1/4 inch rounds). If you are using fresh okra slice it into 1/2 inch rounds.

I use a heavy skillet for browning the okra. First place 2 tablespoons of oil in the skillet and saute the okra for 10 to 15 minutes or until the ropiness is mostly gone. Set the okra aside.

Next I use a large Dutch oven type pot to create the roux. First turn the heat to medium and put in 1/2 cup of oil and let it get a little bit hot. Then pour in the flour and begin stirring constantly. You must watch the mixture carefully during this process. After a time the ingredients will become bubbly and you will smell something akin to popcorn. It won’t take long after that for the roux to begin to achieve the lovely dark brown color that you are seeking. Be careful not to burn the mixture or it will affect the taste of your gumbo.

Once you have a nice brown color with the roux add the onions, green pepper and celery and mix them in. Let them saute until they are tender being certain to stir them during the process. It is okay to let them stick to the bottom of the pan as they cook but scrape the residue with a spoon if that happens because it will create a good flavor in the mix. Don’t let the vegetables burn.

Once the vegetables are tender add the tomatoes, sausage and okra. Stir the new ingredients into the mixture and cook for about 15 minutes. Then add all of the spices and mix well. Finally Pour in about 8 cups of the chicken stock that you made the day before. (I usually heat it just a bit before I need it so that it won’t be cold when I put it into the gumbo mixture.)

Bring the ingredients to a boil and then lower the heat and simmer for one hour stirring about every fifteen minutes. Finally add the cut up chicken and more stock if you need to thin down the broth. Simmer for 15 more minutes.

Serve with rice, a nice green salad and French bread. It is especially yummy on a cold day and much milder than seafood gumbo for those who don’t like their food to be too spicy.
