The Banquet Table of Anthony Bourdain

(It’s taken me a bit to consider what I wanted to say about Anthony Bourdain. I suppose that is okay, because all too often we mourn the loss of someone and then seem to move on to other things. I think that he is someone worth remembering, and we would do well to model his approaches to learning about and loving people. His suicide will never define the incredible person that he was. Mental illness all too often steals some of the best among us away.)

When I think of good times with family and friends it almost always involves food. My grandmother Little was a country woman through and through whose dishes focused on things like fried chicken, fresh fish that she caught herself, pot roast and oodles of vegetables from her garden. Eating Sunday dinner with her was more than just a consumption of cuisine worthy of the Pioneer Woman. It was a communion of love that was special from the Happy Village dishes on which she served her recipes to the strawberries and cream that she spread on thin slices of cake. We understood that those gatherings were a gift from our grandma that we have never forgotten. Our senses somehow manage to recall the bounty that she spread on her mahogany dining table with clear detail. Even decades later we are able to recover the tastes, aromas, and sights from the memory banks of our brains. They serve as a the trademark of the wonderful moments that we shared with her. Those memories keep her alive in our minds decades after she was gone.

We so often associate food with our relationships. My mouth waters just a bit when I think of Ed’s “fancy” that included oysters Rockefeller, red beans and rice and conversation that I will never forget. I smile at the thought of Linda’s perennially delicious dishes over which we sat for hours raising our families together and building  lifelong relationships. Bieu’s pig roasts and crawfish boils always bring a diverse group of people together even when we sometimes have no idea what everyone is saying. Monica gives us a taste of Europe and a feeling of welcoming warmth. Michael grills his burgers as the children play and we reminisce about times past and celebrate those yet to come. Granny’s tea time was a backdrop for serious discussions. Uncle Paul’s  green eggs and ham were the stuff of our jokes that in truth were somehow strangely delicious. The tangerines and nuts that filled bowls at Christmas time reunions represented the bounty that our crazy immigrant family had achieved. Grandma Ulrich with her weak, milky, sugary cups of coffee taught us how to bring elegance and joy to the most simple fare. Food is most certainly intimately intertwined with family, friends, relationships.

Anthony Bourdain was one of those people who understood the power and symbolism of sharing food. He traveled the world, breaking bread in places where many of us would not dare tread. He introduced us to the loveliness of our humanity and also taught us the importance of being respectful to all cultures. He truly loved people not for how he wanted them to be, but exactly the way they really were. His enthusiasm for the unusual was always apparent in his stories and interviews. He understood that there is not one right or wrong way of doing things or being. He was a beautiful man in that regard. There was a complexity of his intellect and ability to use words, but there was also a simplicity in his delight over very small joys.

We need more people like Anthony Bourdain, a man who appeared to be judgement free. One of my favorite stories of him was about his defense of an older woman who wrote a restaurant review column for a newspaper in North Dakota. She became the butt of snarky commentary and jokes after she published an earnest piece about the opening of an Olive Garden in her town. She was polite and complimentary of everything from the decor to the professionalism of the server. For her efforts she was virally ridiculed. It was Anthony Bourdain who came to her rescue by noting quite gallantly that she was providing us with a portrait of a part of our society that we sometimes don’t see, and doing it very well. He eventually invited her the New York City and encouraged her to publish her best work. He took the time to get to know her better over coffee in a moment that so special for her. Ultimately her book became a hit with his help, but what was most telling about this incident was his compassion and understanding that each of us has something to offer, something new that will enrich lives. This I believe was the key Anthony Bourdain’s success.

The best people, like Anthony Bourdain, not only regale us with good food and exciting stories. They also show us how to treat one another. My grandmothers and my mother both modeled the same kind of behavior for me, demonstrating how to find the beauty in every single person. They encouraged me to open my heart free of preconceived notions. I have been all of the better because of that and I have attempted to pass down that way of embracing the world to my children and grandsons.

I often recall a time when I took my eldest grandson to a small neighborhood grocery store that often attracted an odd assortment of characters. As we pushed our cart through the narrow aisles we heard a gaggle of languages and witnessed some rather odd forms of dress. All the while music sung in a multitude of foreign languages blared over the loud speakers. After we had been there for a few minutes my grandson beamed his most glorious smile at me and exclaimed, “I like dis place. It’s happy!” His comment swelled my heart with pride.

Anthony Bourdain continually challenged us to move out of our comfort zones so that we might find the enriching experiences that truly make life so much more interesting and enjoyable. He showed us that the way to do that is to sit down and enjoy a meal with strangers who in the exchange might even become friends. There’s a whole world of people out there who very likely would love to spend a few hours sharing their stories while supping on the stuff of life. Anthony Bourdain showed us how to do that and how to really live. May he now rest in peace with a special seat at the great heavenly banquet table.

Summertime and Burgers

Even with my healthier diet I enjoy getting a hamburger now and again, especially when summertime rolls around. My dad used to grill burgers every weekend and after he died my mother continued the tradition. I’d rather just pick one up at a drive though than have to go through all of the trouble of making one at home, and in my mind there is no substitute for a Whataburger. I’ve tried In n Out burgers and they just don’t cut the mustard. (Pun grossly intended) The only other version of the American classic that I ever really liked came from a local chain called Chuck Wagon.

The first Chuck Wagon that I visited was on Old Spanish Trail in Houston. It was good but lacked the ambience of the one on Park Place that ultimately stole my heart. It was little more than a truck eatery without wheels. It was a box just large enough for a small crew and a griddle along with places to stash the meat and other supplies. A big hulk of a man labored over the cooking while sweating profusely and wielding salt and pepper shakers like a Samurai sword. He was a sight to behold along with the heavy red faced woman who took the orders. The only seating was outdoors, so unless it was a perfect weather day we would take our food home where we savored the lusciousness of our beef sandwiches that were cooked and dressed to perfection. That hole in the wall lasted for most of my childhood and early adult life and then simply faded away, being overtaken by bigger chains with drive in windows and more variable menus.

For a time there was a great place for burgers on the campus of the University of Houston in a little wooden building called The Woods. It was located on what was then the edge of the campus and run by a couple of ladies who were so business like that they rarely smiled or paused from their work to chat. They had learned how to prepare their juicy delights as quickly as possible to keep the long lines moving. I rarely had the money to purchase their gourmet cooking but when I did I truly enjoyed their culinary expertise. Their fare was dripping with greasy delight that didn’t worry me at all because I was not yet twenty years old and weighed under a hundred pounds. A little fat and cholesterol probably did me more good than bad, and I got plenty of both there. My mouth still waters when I think of those yummy bites of beef. Unfortunately progress and growth required cutting down the trees that gave the place its name and putting in a big building to house more classes and research.

I really can’t take a bad burger and there are so many candidates for that dishonor. I avoid MacDonald’s unless it’s breakfast time. If I’m forced to try one of their traditional offerings I prefer the kiddie version. I find that less burger is best in that establishment. I also avoid Carl’s Jr., Red Robin, Wendy’s and the worst of them all in my mind, Burger King.

I can’t completely explain what I despise about Burger King. It was a favorite of my mom and I always see a big crowd wherever they set up a restaurant. I just almost gag even at the thought of eating there. I suspect that I have some deep seated psychological problem with the place brought on by a traumatic event that I have blocked in my mind. I can’t otherwise think of any other reason for my extreme feelings of loathing. I would literally prefer going without food to consuming a meal from there. In fact, I once did on a long road trip to Chicago.

We had driven from early morning and when lunchtime game we were in the middle of nowhere with few choices for eating. Mike attempted to find a place that would be satisfactory for me with no success. Frustrated, he finally saw a Burger King and announced that I would have to make do. I almost barfed at the thought but decided that my strange feelings were perhaps a bit silly, and so I agreed to give it a try as long as the burger was made according to my specifications. When we got the order and continued down the highway I opened my sandwich only to find that they had used mayonnaise in spite of my very specific demand that mustard be the only acceptable condiment. I wanted Mike to turn around and go back but he was on a mission to make time and told me to show a bit of flexibility and just do my best to enjoy the nourishment as is. Instead in a flash of fury I threw the whole thing out the window onto the highway to the delight of a flock of vultures that immediately descended on the feast. I pouted for hours searching hopelessly for another place to stop. That didn’t materialize until later that night at a service station where the only offering was a tuna sandwich in one of those plastic sleeves. I decided to go hungry and sulk rather than take a chance on being poisoned. Mike on the other hand found the repast to be delightful.

Not long ago there was a news story about a Burger King in Delaware that showed mice crawling around inside bags of buns. The health department rushed out to the restaurant after a report from a customer and found mouse droppings and other filth all over the place. They summarily shut the place down. My stomach heaved as I watched the images and I found myself feeling a bit justified for my strange aversion to all food from Burger King even though I’ve never had any evidence that the ones around here are unclean. 

For now I’ll stick to Whataburger since I don’t indulge in that sort of diet much anymore. A local chef named Killen makes a rather good version that I like to consume now and again as well but his are a bit more pricey. Amazingly the most memorable hamburger that I have ever eaten was in a hotel in Minneapolis. It was so good that I went back for more multiple times before I left that town. The meat was superb and it didn’t hurt that it was smothered in blue cheese which I didn’t initially think that I would like as much as I actually did. My mouth waters just thinking about it.

For me a hamburger is the great American summertime sandwich, but if it isn’t done right, then I’m not interested. I’d rather feed a bad burger to the buzzards than compromise my standards and at least for now Whataburger has my loyalty.

Oh SNAP!

Try to imagine living on a net monthly income of about one thousand dollars a month. It would create a constant struggle to meet even the most basic needs of food and housing. In the Houston area we have a lower cost of living than most places, but even here it’s difficult to find housing for less than seven or eight hundred dollars a month. Just paying rent alone takes a huge chunk from such a meager monthly budget, and when utilities are added to the bottom line there is very little left to take care of other basic needs.

Sadly there are very good people who work but still don’t manage to move past the level of poverty. Then, of course, there are the elderly who are no longer physically able to hold down jobs whose monthly checks provide them with ever diminishing spending power. To offset the hopelessness of living in such situations the federal government instituted the Supplementary Nutritional Assistance Program, otherwise known as SNAP.

Recipients of SNAP benefits must certify that they meet the standards of one hundred percent of the designated poverty income levels. They may have a home but no more than a few thousand dollars in savings and other assets. Once they have been verified they receive an EBT card that has been preloaded with funds that they may spend at designated grocery stores for the purchase of food. Eligible recipients are free to choose the items that they prefer but may not make nonfood purchases with the card, nor may they include certain products like beer or wine. SNAP requires individuals and families to continually certify their financial status to insure that eligibility requirements are being met.

While it is generally known is that many Americans are lacking proper nutrition in their diets, the SNAP program does not restrict particular food choices, even if those include soda, candy and other questionable snacks. Studies have shown that enforcing nutritional standards would make the program far too costly, as well as creating paperwork nightmares. Efforts to improve the delivery of wholesome foods to those needing assistance have been mostly unsuccessful. Recently President Donald Trump recommended a major change to the program that would take the element of choice from those receiving the benefits. He proposes a system that would send boxes of nonperishable food items to individuals and families each month rather than reloading funds into an EBT card. The suggestion has created a firestorm of criticism and concern.

Obviously the cost and logistics of delivering the food would be enormous. There are a number of nagging questions about how to make such a system effective, and many concerns about whether or not it is even possible. Take for example the situation of someone who is not home when the box arrives. Does the delivery person just leave the food hoping that it actually ends up where it is supposed to be, or does he notify the recipient to reschedule? How efficient would such a system be when deliveries have to be made to far flung rural areas? Who will be in charge of the distribution process? Will this kind of system require whole new staffs of people?

Of course the most obvious question literally becomes one of taste. Each of us has certain dietary preferences. I can’t imagine not having the freedom to decide what kinds of foods I might purchase, and I find it insensitive to think that the poor should not be allowed the same liberties that I enjoy. I also prefer fresh fruits and vegetables and the idea of only having canned varieties is a very unpleasant one.

My mom was a widow who never made a great deal of money. There was only a brief period of time in her life after my father died when she enjoyed a high standard of living. Most of the time, especially in her later years, she was only barely above the one hundred percent poverty level. At the time of her death she missed that standard by one hundred dollars a month. Even though she owned her home by then, she barely scraped by. She reached a point at which she was stretched to the maximum and yet she was not spending money frivolously. She rarely purchased new clothing or shoes. She did not own a car. Her house needed major repairs that had to wait. Much of her income went toward utilities, medical expenses, insurance costs, and food. She pinched every single penny, especially when it came to purchasing food, and yet she always managed to have a very healthy diet. Her secret was in choosing very carefully. Rarely did she buy canned items. Instead she bought seasonal vegetables and cuts of meat that were on sale.

My mom used the skills of meal planning and her knowledge of nutrition to prepare healthy meals. A carton of eggs lasted for a week and gave her a good breakfast to eat in six of the seven days. She searched for the stores that had the best prices and always bought her food for a bargain. She regularly chose meats that would provide her with multiple meals and vegetables that would be sides as well as ingredients for soups. She loved dried beans and there was rarely a week when she did not prepare a large pot of some kind of legume that would serve as lunch or dinner for many days.

I took my mother grocery shopping on Friday evenings and she would spend hours determining how to get the most bang from her buck. Rarely did she spend more than twenty five dollars and yet she managed to get bags and bags of items. She made it a kind of challenge to walk out of the store with a wonderful variety that she had purchased at a very low cost. In fact, she often urged me to join the competition and would raise an eyebrow at any extravagant purchases that I made, pointing out that the sale apples were just as good as the more expensive ones that I had chosen.

It was difficult for my mom to make it on her low income, and yet she did. She was profoundly independent and she was proud to be able to be the mistress of her own budget. She sometimes grumbled that she was just shy of receiving some assistance from the government, but she would not have taken anything away from those who did because she understood their plight. I suspect that she would have allowed more treats in her diet had she been given a bit more purchasing power. Mostly though she enjoyed the ability to choose. I think she would have found it distasteful to have someone insinuating that she was somehow ignorant or less than able to be her own mistress simply because her income was so sparse.

I understand all of the arguments from people who worry that the taxpayers’ money is often wasted on frivolous items that don’t seem to be necessary components of a healthy diet. What I find hypocritical is that some of the very same people complained loudly when First Lady Michelle Obama helped create nutrition rules for school lunches. They voiced their objections to being told what their children might eat. Many of them often insist that their private decisions should be their own, and I agree with that concept. I just don’t think that it is right to exclude the poor from the right to determine what will be on their tables at dinner time. It’s not up to us to make decisions for them even when they slip in a bag of cookies for their children. It’s good for the soul to have a treat here and there. Why would we want to deny them?

I am open to the concern that some of the SNAP funds are not being spent properly, but I just don’t believe that we need to be nannies or create programs that will become more complex than they need to be. Let’s think of better ways to help people bring nutritious meals to the tables of our fellow citizens without insinuating our own preferences on them. Let’s put ourselves in their shoes and demonstrate a bit of understanding. But for circumstances we might one day find ourselves in their shoes.

Living A Good Life

Gym-equipment-pic.jpgI’m relatively healthy given my age. I’m more likely to need dental work than any type of medical procedure. I take vitamins and a medication for GERD which is produced in my case by a hiatal hernia and a very narrow esophagus. My grandmother once told me that everyone in her family lived to an old age, but eventually died of “gut” trouble. So far I seem to be proving her theory to be correct, but a few years back I decided that it might be a good idea to have a Primary Care Physician, someone who would coordinate all of my issues in one place. I had no idea where to start in choosing someone, so I asked my husband’s and mother’s cardiologist to suggest a few outstanding physicians that he knew. I decided on a fairly young doctor with high marks and a most interesting name. I mean who would not be intrigued by a name like “Septimus?” I figured that at the very least I would have no difficulty recalling such a moniker, and besides I had to meet this person with such a regal sounding handle.

I’ve been with Dr Septimus ever since, and it’s a good thing because he is exactly the kind of person that I was seeking. He is very serious, hardly cracking a smile or a joke, but he knows his stuff and he’s inclined to share it all with me. He is unwilling to overlook any little aspect of my health, including my exercise regimen. In that regard he has recently demanded that I join a gym and work out at least five times a week. Luckily my new Medicare Advantage Plan includes membership at a variety of places. Dr. Septimus felt that I would feel the most comfortable at the YMCA, where I might avoid the muscle bound devotees and be around folks more like myself. After reviewing several possibilities I found myself agreeing with him, and so I joined a couple of weeks ago. I have to say that it has been a grand experience. Even the personal trainers are not intimidating.

The local YMCA is a short drive from my home and everyone there is quite friendly. I received a personal training session and a fellow up as part of my membership. A very nice woman told me which machines to use in the beginning and how to set them to my personal specifications. At first I felt a bit odd because the truth is that I am a virtual blob of flab. My initial encounters with the weight machines proved how much I needed them. I had to keep reminding myself that nobody was watching me, and I thought of a business proposal that some of my former students once suggested which involved creating a special exercise space for very unfit individuals. I was thinking how nice it would have been to be surrounded by a bunch of blobs like me, but then where is the motivation in that?

Once I got over my self consciousness and nerves I realized that all of us are in the process of improving ourselves. There are young folks who are amazingly fit and people older than myself who are barely able to move. The point is that all of us are after the same essential goal. The trainer told me that I would see results more quickly than I thought, and she was quite right. The first thing I noticed was how much more energy I have. I am no longer experiencing that afternoon let down that made me want to take a quick nap each day. Instead I am moving so constantly that achieving ten thousand steps a day has become a piece of cake. I get more done in a few hours than I ever imagined would be possible. The only difficulty that I have experienced has been working the gym time around all of the other appointments that I have. I don’t like to go there when it is really crowded, but I suppose that I will learn how to balance all of my demands eventually.

So far I’ve managed about an hour and fifteen minutes of exercise five days each week. The chest press that seemed so difficult initially is already reaching a point of comfort that tells me that I may need to increase the weight. I’ve begun to overcome the elliptical machine which originally ate my lunch. I dream of wearing summer clothes with a bit more pride, and I suspect that I will be successful in that regard as long as I keep up the routine. I’m thankful for Dr. Septimus because he is not about to let me off of the hook. I can’t get anything past him. He monitors me like a hawk and gives me the kind of evil eye that a parent or teacher might invoke whenever he realizes that I am slacking.

I don’t know why we humans allow ourselves to become so unhealthy. I guess there are just too many temptations urging us to cheat. I’ll be the first to admit that given the choice between a big bowl of chips and cheese dip versus a big juicy apple I would tend toward the worst of the two. I have to work hard to stay within the most reasonable eating norms, but I have been quite diligent in that regard. The result has been that when I do fall off of the wagon I feel rather sick. My body just doesn’t like me when I feed it junk food anymore. It has adjusted to a routine of fruits and vegetables made with spices but no salt or added sugars. I’ve become such a regular at Sprouts, the Farmer’s Market and the produce section of HEB that Quicken notes my expansive use of finances for good food.

I find myself wondering how the very poor are able to fund healthy food, when I realize how much more it costs to invest in it. I think of their inability to join a gym, and feel a bit guilty that I have privileges that they don’t. I remember my mom putting back apples because she had estimated how much she had to spend and didn’t have enough. I feel so fortunate to have a doctor who cares enough about my welfare to push me to exercise and eat well. I am lucky to have a medical plan that pays for him and my gym membership. I have enough retirement income to bring fresh vegetables into my home. I have everything that I need to feel younger than I am because I am living a good life. I need to remind myself of the next time that I begin to falter.

A Born Again Health Nut

My mother-in-law was born with a serious heart defect. As a result she lived her life far differently than most of us. When she was in Junior High she was told that she would probably only live to her mid twenties, and then only if she was very lucky. When she married she was cautioned not to have children because the stress of being pregnant and giving birth would surely kill her. Always the independent woman she nonetheless risked her own life to bring my husband into this world. She often recounted the lengths to which she committed herself to having him. The story was quite harrowing and demonstrated both her courage and love.

She was put into a state of sleep shortly before her baby was due. The doctors then brought her son into the world by way of Caesarian section. She was kept in a slumber until it was deemed safe to bring her back into consciousness. Since she lived on the same street as her mother she was able to rest each afternoon while her mom did much of the heavy lifting with the baby. Slowly but surely she recuperated and surprised her doctors with her resilience.

All of this happened in 1947, so the advances that have been made in the treatment of the heart had not yet been discovered. She was still at high risk of dying if she overexerted herself. In many ways her life and that of my husband were miracles that had a great deal to do with my mother-in-law’s determination to employ whatever means necessary to extend her life.  As a result she became an expert at pursuing a healthy lifestyle even before such an idea was popular.

I was admittedly bemused when I first saw my-mother-in-law’s kitchen. She always kept a scale for weighing foods at the ready and her cookbooks had exotic titles with recipes from nutritionists and doctors. She was conscientious in recording her intake of salt, calories, cholesterol and such. She was a student of nutrition and an advocate of proper exercise. Sometimes I grew a bit weary of her lectures on how to live, but in retrospect I realize that she was way ahead of her time. She outwitted death and made her doctors’ predictions of her early demise appear to be akin to voodoo. She lived all the way into her late seventies, far past the age that most thought she would attain, and she did so with a sparkle in her eyes and a zest for life that was incredible. She had done everything possible to defy the odds that were so heavily stacked against her, enriching everyone that she encountered in the process. Never once do I remember even an ounce of negativity or lack of faith in her approach to each day. She was truly a warrior.

Now I am doing my best to recall the many lessons that my mother-in-law so patiently taught me. That son that she risked her very life to bring into this world is now facing his own health problems, and as with her there is no miracle cure, but there are ways to help the situation. My goal is to support him as he adopts the very life style that worked so incredibly well for his mother. To that end he and I are both changing our ways, perhaps a bit belatedly, but in the hopes that our efforts will provide us with more time to enjoy this beautiful world together with our children and grandchildren.

Our kitchen now sports a scale for weighing our foods along with an array of cookbooks touting heart healthy recipes. Our larders are filled with fresh fruits, vegetables and lean meats and fish. Our treadmill which had become dusty from disuse is churning away. We keep records of every morsel that goes into our mouths and have learned the joys of hydrating with water. We have become as serious about taking care of ourselves as my mother-in-law ever was, and I often feel her spirit guiding us on this new journey of ours.

I have to admit that I have at times been a bit irritated by people who spend so much of their time honoring their bodies with proper foods and exercise. I have rolled my eyes more than once at their focus on health just I as sometimes grew weary of hearing my mother-in-law describe the latest foods or techniques that she had discovered. Now in the moment of crisis I find myself wanting to walk around wearing a sandwich board that urges everyone to eschew their bad habits now. If I could, I would burn down every tobacco field on planet earth. Like Jesus with the money changers I would overturn the tables of candy and fatty foods that tempt shoppers in all of the grocery stores. I would insist that children do as well with physical activities as we ask them to do with mathematics and reading. I have become a fanatic overnight because I have seen what happens when we ignore the common sense notion that our bodies are as important as our minds.

My daughters are fearful that there may be a genetic tendency for stroke that they carry and may have passed on to their children. They worry about what they might do to prevent the kind of health emergency that we all recently endured when my husband had a stroke. I have told them that the solution is quite straightforward, and it was outlined magnificently by their Granny long ago. We must all do our very best to lead healthy lives from this day forward. That means that we are careful every single day of what we choose to eat or drink and how much activity we provide for our bodies.

There are so many wonderful resources in our world today that my mother-in-law never had. We now know much about how to best treat our bodies. I am finding that my husband and I are eating quite well and never feeling underfed or somehow beset upon. There are incredible recipes that use very little fat, salt, sugar or carbohydrates. Vegetables have become our staples and we prepare them in a variety of tasty ways. We are consistently losing the excess pounds that have been stressing our hearts. Our muscles and our stamina are growing stronger. Both of us are developing a kind of glow. It feels good to be on the right track and thankfully many of the people who once annoyed me with their crusades for health are helping me to launch my own odyssey. They are more than eager to help a fellow convert, no matter how late to the game I may be.

Perhaps I’ll do my part by sharing some of my favorite tasty recipes in the future. I’m trying different things and taking notes. The key appears to be in starting with a weekly menu plan, something that I used to laugh at my mother-in-law for doing. Now I understand that having good meals doesn’t just spontaneously happen. It takes a bit of effort that pays huge dividends in the end.

So here I am now, a born again health nut. Who knew that I would come to this? It’s a great feeling actually, and I’m not afraid to proclaim that we should all do ourselves a favor by mending our ways. There are no guarantees in this life, but it won’t hurt any of us to treat our bodies with the respect that proper care and feeding provides. My mother-in-law fought for her life. Now I will honor her by fighting for the lives of all of her descendants who are only here because of her courage and sacrifice.
